A good recipe for homemade apple pie spice consists of 1/4 cup ground cinnamon, 1 tablespoon ground allspice, 2 teaspoons nutmeg, 2 teaspoons ground ginger and 1/2 teaspoon ground cardamom. The spice blend is good for flavoring sweets like apple pie.
Naturally, apple pie spice is commonly used for making apple pie. The Food Network has a recipe for deep dish apple pie that calls for the same spices, or using 1.5 teaspoons of premade apple pie spice. This recipe calls for making a crust out of 12 tablespoons of very cold butter and 1/3 cup of very cold vegetable shortening as well as 3 cups flour, 1 teaspoon salt, 1 tablespoon sugar and 8 tablespoons ice water.
To make the crust, dice the butter. Prepare the flour mixture by combining the flour, salt and sugar. Pulse the flour mixture in a food processor with the butter and shortening, and then pour in the ice water until a dough forms. Roll this out into two crusts, placing one in a greased deep dish.
For the filling, core and quarter 4 pounds of apples, and cut these slices into thirds. Add orange and lemon zest as well as 2 tablespoons lemon juice and 1 tablespoon orange juice. Combine with 1/2 cup sugar, 1/4 cup flour, 1 teaspoon salt and the apple pie spice.
Pour the filling into the deep dish, and cover with the second crust. Bake at 400 degrees Fahrenheit for one hour.
