To prepare lentils with sausage and chard, fry 4 chopped carrots, 2 chopped onions and 3 minced cloves of garlic with 2 tablespoons of olive oil in a pan. Stir in 4 chopped Aidells spinach and feta sausages, 3 cups of French green lentils, 5 cups of chicken stock, 1 bay leaf, and 2 teaspoons each of fennel seeds and finely chopped rosemary leaves. Cover the pan, and allow the mixture to simmer for 20 minutes. Roughly chop the leaves from 2 pounds of Swiss chard, and fold the leaves into the stew. When the lentils and chard leaves are tender, discard the bay leaf, and add salt and black pepper to taste.
To make sausage nachos, cook 4 Aidells habanero and green chile sausages with 1 chopped clove of garlic, 1 teaspoon of dried oregano and 1/4 teaspoon of ground cumin with 1 tablespoon of olive oil in a pan. Stir in black beans from a 15-ounce can, and add salt and black pepper to taste. Arrange 8 ounces of corn tortilla chips on a sheet pan, and distribute the sausage mixture and 8 ounces of grated cheddar cheese on top. Bake the nachos at 450 F until the cheese is hot and bubbly, and garnish the dish with chopped green onions, cilantro, sour cream and salsa.
