EatingOnADime.com suggests using white American cheese to make its version of a Mexican white cheese dip. In addition to cheese, the recipe calls for milk, butter, chiles, cumin, garlic salt and cayenne pepper.
Start with 1/2 pound of white American cheese, either shredded or in slices, and place it into a saucepan along with 1/4 cup of milk and 1 tablespoon butter. Stir frequently as the mixture melts. Add in a 4-ounce can of green chiles, 1 teaspoon of cumin, 1 teaspoon of garlic salt and a pinch of cayenne pepper. Stir until well mixed. Add more milk for a thinner dip. For more spice, add chopped up jalapenos or hot salsa. Serve right away, or transfer to a slower cooker kept on the low or warm setting.
To create a thicker version of this dip, use half and half. Mix it with a little water if it becomes too thick.
Another twist on this recipe calls for crumbled and cooked bulk sausage.
Serve the dip with tortilla chips, bread chunks or cut-up vegetables. Pour the dip over burritos, quesadillas, baked potatoes or stuffed peppers to create a meal. Alternatively, serve the dip over steamed vegetables or in macaroni and cheese.
