Honey-Sriracha chicken wings is a good recipe using sriracha, the spicy Thai chili sauce. The recipe serves four people and takes about an hour to prepare and cook.
Paper towel-dry 2 pounds of chicken wings that have been split at the joints and have had the tips removed. Mix 2 tablespoons of vegetable oil, 2 tablespoons of melted unsalted butter, 1 teaspoon of granulated garlic, 1 teaspoon of Kosher salt and 1/2 teaspoon of fresh ground pepper in a large bowl. Add the chicken to the bowl, and toss the wings, coating them well. Spread the wings in a single layer over a large, rimmed baking sheet that has been lightly coated with vegetable oil. Bake the wings at 400 degrees Fahrenheit for 45 to 55 minutes until they are crispy and browned.
Melt 5 tablespoons of unsalted butter in a small saucepan over medium heat. Stir in 1/3 cup of honey, 1/4 cup of Sriracha sauce, 1 tablespoon of soy sauce and 2 teaspoons of fresh lime juice. Continue stirring, and heat the mixture until it is gently bubbling. Remove it from the heat,and set it to the side.
Transfer the wings from the baking sheet to a large bowl, pour the warm sauce over the wings, and gently toss until coated. Remove the wings to a serving platter, drizzle honey over them, and serve with fresh lime wedges.
