A good recipe using mushroom soup is the One Dish Chicken & Rice Bake from Campbell's Soup. You need 1 can of condensed mushroom soup, 1 cup water, 3/4 cup uncooked long-grain rice, 1/4 teaspoon paprika, 1/4 teaspoon black pepper and 1 1/4 pounds boneless skinless chicken breasts.
Preheat the oven to 375 degrees Fahrenheit. In a baking dish, stir together the soup, water, rice and spices. Lay the chicken on top, and season it with some additional paprika and black pepper. Cover the dish, and bake it for about 45 minutes or until the chicken is cooked through. Stir the dish, and let it stand for 10 minutes before serving.
A good side dish recipe that uses mushroom soup is Cheesy Scalloped Potatoes. Besides a can of condensed mushroom soup, you need six potatoes, thinly sliced, one small sliced onion, 2 cups cheddar cheese and 1/2 cup water. Line the bottom of a baking dish with the sliced potatoes, then layer the cheese, onion and dash of salt and pepper on top. Continue to layer until you finish with a cheese layer. Then mix the soup and water, and pour them all over the dish. Bake for about 90 minutes or until the potatoes are tender.
