A recipe using Andes mints is Chocolate Mint Cake. To make it, combine 1 package chocolate cake mix, 1 1/3 cup water, 1/3 cup vegetable oil and 1 tablespoon melted butter. Beat on low speed for 30 seconds, then high for 2 minutes. Stir in 1 cup chopped Andes mints.
Spray and flour the bottom of a cake pan, then pour batter into pan. Bake at 350 degrees for 30 minutes, or when cake top springs back when lightly touched. Cool. To make frosting, beat 8 ounces cream cheese, 1/2 to 1 teaspoon peppermint extract,1/4 cup softened butter and 1 cup powdered sugar. Alternately, add and beat 1 1/2 to 2 1/2 cups powdered sugar with 1/3 cup light cream until frosting is fluffy. Beat in 2 drops green food coloring as an option. Frost cooled cake and sprinkle with 1/3 cup Andes mint pieces.
Another good recipe using Andes mints is Skinny Mint Cookies. These are similar to the Girl Scouts' Thin Mints. To make these, combine 2 cups semi-sweet chocolate chips and 2 cups milk chocolate chips in a microwave-safe bowl. Alternate microwaving for 1 minute and stirring until chips are melted and mixture is smooth. Stir in 20 Andes mints. Add 1/8 teaspoon peppermint extract and stir until smooth. Open 1 package plain chocolate wafer cookies and dip cookies into chocolate mixture. Smooth off any excess chocolate and set on waxed paper to cool.
