To make the turkey noodle soup on FoodNetwork.com, start by preparing the ingredients. Clean and chop 2 leeks and 2 carrots. Chop 1 stalk of celery, and mince 1 clove of garlic. Chop enough parsley to make up 2 tablespoons of leaves. Shred or cube enough cooked turkey to make up about 3 to 4 cups of meat.
Warm up 2 teaspoons of olive oil in a large pot. Sauté the leeks, carrots, garlic and celery for four minutes or until they are tender. Stir in the turkey along with 2 or 3 bay leaves, 2 teaspoons of dried thyme, 1/2 teaspoon of salt and 1/4 teaspoon of ground black pepper. Pour in 8 cups of reduced-sodium chicken broth. Let the mixture come to a boil before lowering the heat and allowing it to simmer, partially covered, for 10 minutes.
Bring the mixture to a boil again. Toss in 6 ounces of dried egg noodles, and cook for another 10 minutes or until they are just tender. Add 1 cup of frozen green peas, and cook for one minute or until they are warm. Remove the pot from the heat source, and take out the bay leaves. Fold in the parsley.
