A good recipe for tamale pie using corn bread mix is Jiffy's Tamale Pie. To make it, whisk together 1 package of corn muffin mix, 1/3 cup of milk, 1 egg, 1 can of cream style corn and 1 can of green chiles, and mix in 1 1/2 tablespoons of taco season and 1/4 teaspoon of pepper. Spoon the mixture into a pan, and bake it at 400 Fahrenheit for 30 minutes. Serve it with enchilada sauce, chicken and cheese.
Make another good recipe, the Easy Taco Tamale Pie from Campbell's Kitchen, by browning 1 pound of ground beef in a skillet and stirring in 1 can of undrained whole kernel corn, 1 16-ounce can of picante sauce and 1/2 cup of shredded cheddar cheese. Make 1 box of corn muffin mix, and dollop it over the beef mixture after transferring the meat to a baking dish. Bake the tamale pie at 375 F for 25 minutes.
To make Chicken Tamale Casserole, combine 1/4 cup of shredded four-cheese Mexican blend, 1/3 cup of milk, 1/4 cup of egg substitute, 1 can of cream-style corn and 1 can of drained chopped green chiles, and stir in 1 teaspoon of ground cumin, 1/8 teaspoon of ground red pepper and 1 box of corn muffin mix. Spoon the mixture into a baking dish, and bake it at 400 F for 15 minutes before poking the cornbread mixture with a fork and spreading 1 can of red enchilada sauce over it. Top the casserole with 2 cups of shredded cooked chicken breast and 3/4 cup of four-cheese Mexican blend, and bake it for another 15 minutes.
