A quick and easy sweet rice recipe calls for long-grain white rice, milk, cream, butter and raisins as well as a number of spices. Another easy recipe, Mexican rice pudding, uses only a few ingredients including evaporated milk, condensed milk, whole milk, raisins and rice.
To make sweet rice, cook 1 cup of long-grain white rice with 2 cups of water and 2 tablespoons of unsalted butter for 20 to 25 minutes. Meanwhile, mix together 2 cups of milk, 1 tablespoon of all-purpose flour, 1/3 cup of white sugar, 1 egg and 1 1/2 teaspoons of vanilla extract, and pour the mixture into the pot with the cooked rice. Cook the mixture on low for 15 minutes, and add 1 cup of whole milk, 2/3 cup of heavy cream, 1/2 teaspoon of ground cinnamon and 1/2 cup of raisins. Allow the mixture to cool slightly before serving.
Make Mexican rice by boiling 1 cup of long-grain white rice in 7 cups of water with 1 cinnamon stick for 18 minutes and removing the liquid and cinnamon stick once the rice is tender. Add the rice back to the pot along with a 12-ounce can of evaporated milk, a 14-ounce can of condensed milk and 1 cup of whole milk. Bring the mixture to a boil, and then continue to cook on low heat for 20 more minutes. Stir in 3/4 cup of golden raisins, and serve the rise sprinkled with ground cinnamon.
