Preheat an oven to 350 degrees Fahrenheit. Combine 2 cups of peeled and cooked sweet potatoes with 1 cup of sugar, 1/2 stick of melted butter, 2 eggs and 1 teaspoon of vanilla extract in a mixing bowl using an electric hand mixer. Season the filling with 1/4 teaspoon of salt, 1/4 teaspoon of ground cinnamon and 1/4 teaspoon of ground ginger and mix again. Transfer the filling to a pre-made 9-inch pie crust, set in the oven and bake for 35 to 45 minutes until the filling sets. Take the pie out of the oven and allow it to cool to room temperature.
Make the meringue topping by beating 3 egg whites with an electric mixer until soft peaks form. Add 1/4 cup of sugar 1 tablespoon at a time, beating until the sugar dissolves and the meringue appears glossy and stiff. Use a rubber spatula to apply the meringue to the surface of the pie, making sure the meringue touches the crust of the pie all the way around.
Sprinkle the meringue with a touch of granulated sugar and set back in the oven for 10 to 12 minutes, baking until the meringue is slightly browned. Allow the pie to cool before serving.
