To make sweet potato cobbler, first peel 2 pounds of sweet potatoes and slice them into 1/4-inch thick slices. Cook the sweet potatoes in 3 1/2 cups of water for about 10 minutes, or until the potatoes are crisp-tender. Drain the sweet potatoes, and reserve 1 1/2 cups of the cooking liquid.
Grease a 13-by-9-inch baking dish, layer the potatoes in the dish, and add the reserved cooking liquid. In a bowl, combine 1 1/2 cups of sugar, 3 tablespoons of all-purpose flour, 1/2 teaspoon of ground cinnamon and 1/4 teaspoon each of ground nutmeg and salt. Sprinkle the mixture over the potatoes, and dot with 3/4 cup of cubed butter.
In another bowl, combine 2 cups of all-purpose flour and 1/2 teaspoon of salt. Cut in 2/3 cup of shortening until the mixture looks like coarse crumbs. Gradually add 5 to 6 tablespoons of cold water, and mix gently until a ball forms. Roll the pastry into a 13-by-9-inch rectangle, place over the sweet potato filling, and cut slits in the top. Brush the pastry with 2 tablespoons of melted butter, sprinkle on 4 teaspoons of sugar, and bake at 400 F for 30 to 35 minutes until golden brown.Learn more about Desserts
