Taste of Home features a good sweet potato cobbler recipe. The recipe takes about 30 minutes to prepare and makes 10 to 12 servings. Ingredients include sweet potatoes, sugar, flour, butter and spices, including cinnamon and nutmeg.
To make sweet potato cobbler, first peel 2 pounds of sweet potatoes and slice them into 1/4-inch thick slices. Cook the sweet potatoes in 3 1/2 cups of water for about 10 minutes, or until the potatoes are crisp-tender. Drain the sweet potatoes, and reserve 1 1/2 cups of the cooking liquid.
Grease a 13-by-9-inch baking dish, layer the potatoes in the dish, and add the reserved cooking liquid. In a bowl, combine 1 1/2 cups of sugar, 3 tablespoons of all-purpose flour, 1/2 teaspoon of ground cinnamon and 1/4 teaspoon each of ground nutmeg and salt. Sprinkle the mixture over the potatoes, and dot with 3/4 cup of cubed butter.
In another bowl, combine 2 cups of all-purpose flour and 1/2 teaspoon of salt. Cut in 2/3 cup of shortening until the mixture looks like coarse crumbs. Gradually add 5 to 6 tablespoons of cold water, and mix gently until a ball forms. Roll the pastry into a 13-by-9-inch rectangle, place over the sweet potato filling, and cut slits in the top. Brush the pastry with 2 tablespoons of melted butter, sprinkle on 4 teaspoons of sugar, and bake at 400 F for 30 to 35 minutes until golden brown.
