To make Bon Appetit's master sweet dough, warm 2/3 cup whole milk, transfer it to a measuring cup, and stir in 1 tablespoon sugar. Sprinkle 1 3/4 teaspoons yeast over the top, whisking the mixture to combine the ingredients. Turn the mixer to low speed, and add the warm milk along with 1/2 cup softened butter.
