Two good recipes for sugar-free chocolate cake are sugar-free low-carb chocolate crazy cake and sugar-free chocolate cake. Chocolate cake can be free of refined sugar, and use honey, agave or maple syrup for sweetening instead.
To make the crazy cake, combine 1 cup of sesame flour, 1/2 cup of ground flaxseed, 1/2 cup of unsweetened cocoa powder and 1 cup of erythritol sweetener, such as Swerve, in a bowl, and stir in 1 teaspoon of baking soda, 1 teaspoon of baking powder and 1/2 teaspoon of salt. Make three wells in the mixture, and pour 1 teaspoon of white vinegar into one, 1 teaspoon of vanilla extract and 1/2 teaspoon of chocolate liquid stevia into another, and 5 tablespoons of sunflower oil in the third. Pour 1 cup of water over everything, and mix everything until a smooth batter forms. Pour the batter into a parchment-lined baking pan, and bake at 350 degrees Fahrenheit for 30 minutes.
Make another sugar-free recipe beating together 2 eggs, 1 cup of milk, 1/2 cup of canola oil and 2 teaspoons of vanilla extract in one bowl and whisking together 2 1/4 cups of sucralose sweetener, such as Splenda, 1 3/4 cups of all-purpose flour, 3/4 cups of unsweetened cocoa powder, and 1 1/2 teaspoons each of baking powder and baking soda in another bowl. Add the dry ingredients to the wet ingredients, and pour in 1 cup of boiling water and 1 ounce of shaved unsweetened baking chocolate. Pour the batter into two greased and floured round cake pans, and bake at 350 F for 35 minutes.
