A good recipe for stuffed bell peppers requires green bell peppers, meat and yellow onions. It also uses cooked long or medium-grain white rice, tomato sauce and various seasonings. Preparation time is 12 minutes, and cook time is 45 minutes. The recipe yields six servings.
Preheat the oven to 350 degrees Fahrenheit. Boil water in a large pot, and add six green bell peppers with the tops and seeds removed. Cook until tender, and use a slotted spoon to remove the peppers and place them on a paper towel to drain.
Heat 2 tablespoons of vegetable oil in a large skillet on a medium-high heat. Place 1/2 cup of finely chopped green bell peppers and 1 cup of finely chopped onions in the skillet. Mix and simmer for approximately three minutes. Put 1/2 pound of ground beef and 1/2 pound of pork into the skillet. Add 1 tablespoon of minced garlic, 1/4 cup of finely chopped parsley leaves, 3/4 teaspoon of salt, 1/2 teaspoon of ground black pepper and a dash of red pepper flakes. Mix with a wooden spoon for approximately six minutes or until the meat turns brown. Pour 2 cups of rice into the skillet along with 8 ounces of tomato sauce. Mix thoroughly, and take the skillet off the heat.
Add water to a baking dish until it is 1/8 inch deep. Stuff the bell peppers with the seasoned rice and vegetable mixture, and put the peppers into the baking dish. Cook for 25 to 30 minutes, and let the peppers sit for 10 minutes prior to serving.
