To start, melt 1/4 cup of butter over low heat in a saucepan. Whisk in 1/4 cup of butter, 2 garlic cloves, 2 tablespoons of honey or maple syrup, vinegar and two tablespoons of sugar. Also add 2 tablespoons of rice or any preferred type of vinegar, along with 2 tablespoons of Dijon mustard and 2 tablespoons of soy sauce. Mix well. This glaze recipe makes enough for 2 pounds of fish and scales easily.
Set a steelhead trout fillet onto the center of a large rectangle of tin foil. Pour the glaze over the fillet, and fold the foil up around the fish, forming a packet. Allow the fish to marinate with the sauce while preheating the oven to 400 degrees Fahrenheit.
Set the foil packet into the oven, and bake for 10 minutes, plus an additional 10 minutes for each inch of fillet thickness. For example, if the fillet is 1 inch in thickness, bake for 20 minutes, while a fillet that is 1 1/2 inches thick should bake for 25 minutes.
