To prepare a highly rated imitation recipe for Starbucks lemon loaf, preheat an oven to 350 degrees Fahrenheit. Gather two mixing bowls, in the first combine 1 1/2 cups of flour and 1/2 teaspoon each of baking soda, baking powder and salt.
In the other bowl, add 3 room-temperature eggs, 1 cup of sugar and 2 tablespoons of softened butter. Also add 1 teaspoon of vanilla extract, 1 teaspoon of lemon extract and 1/3 cup of lemon juice. Blend these ingredients with an electric mixer until well incorporated, then add the wet ingredients to the dry ingredients and blend again. Add 1/2 cup of oil and continue mixing until the batter is smooth.
Pour the batter into a greased and floured loaf pan and bake for approximately 45 minutes. The loaf is done cooking when a toothpick inserted into its center comes out clean. Cool on a rack while still in the pan.
To prepare the icing, use the electric mixer to blend 1 cup of powdered sugar, 1/2 teaspoon of lemon extract and 2 tablespoons of milk. When the lemon loaf has cooled, remove it from the pan and spread the icing on top. When the icing sets, slice and serve.
