To make spiced pecans, stir together 1 teaspoon salt and 1/2 teaspoon each of cumin, cayenne pepper, cinnamon and dried orange peel. Place 1 pound pecan halves in a skillet, and cook for four to five minutes. Add 4 tablespoons butter, stir until it melts, and then add the spice mixture, 1/4 cup light brown sugar, 2 tablespoons dark brown sugar and 2 tablespoons water. Stir for two to three minutes, and transfer to a sheet pan to cool.
Alternatively, make cinnamon spiced pecans by combining 1/2 cup sugar, 3 teaspoons ground cinnamon and 1/2 teaspoon salt. In a separate bowl, whisk one egg white. Add 1 pound of pecan halves to the egg white, and stir to coat. Sprinkle the nuts with the sugar mixture, and spread them out on a baking sheet. Bake at 300 degrees Fahrenheit for 20 minutes, remove the nuts from the pan, and allow them to cool on wax paper.
To make pecans flavored with cinnamon, cloves and nutmeg, begin by lining a baking sheet with aluminum foil. Whisk an egg white and 1 tablespoon water together in a small bowl. Add the pecans, and stir to coat. In a separate bowl, combine 1/2 cup sugar, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon cloves and 1/2 teaspoon nutmeg. Sprinkle this mixture over the nuts, spread them on a baking sheet, and bake for 30 minutes at 350 F, stirring once during cooking.
