Food Network's soul food-style sweet potato pie recipe uses fresh sweet potatoes topped with a maple whipped topping. The recipe yields eight servings and is easy to follow.
To make the sweet potato pie, preheat the oven to 350 degrees Fahrenheit. Bake 4 medium sweet potatoes for one hour. Let cool, scrape the flesh out of the skin into a large bowl, and mash.
In a separate bowl, beat together 1/2 stick softened butter, 1/4 cup sugar and 3/4 cup brown sugar until creamy. Add 2 eggs, 1 teaspoon pure vanilla extract, 1/2 teaspoon ground cinnamon, and 1/8 teaspoon ground ginger, as well as 1/8 teaspoon ground nutmeg, 1/8 teaspoon ground allspice and 1/2 teaspoon salt. Add 3/4 cup evaporated milk, and mix until combined.
Add the mixture into the mashed sweet potatoes. Beat together with a mixer until smooth, and pour into an unbaked pie shell. Bake the pie on the bottom rack of the oven for one hour, or until the center is firm.
In a separate bowl, beat together 1 cup heavy whipping cream and 1/4 cup confectioners' sugar. Add 2 tablespoons maple syrup, and beat until soft peaks form. Add maple whipped cream to warm sweet potato pie, if desired.
