To make the easy tea cakes, preheat the oven to 350 F. Cream 1 stick of butter and 1/2 cup of powdered sugar for about four minutes. Add 4 beaten eggs and mix thoroughly. Mix in 1/2 cup of sour milk or buttermilk, and then gradually stir in 4 cups of flour. Roll the dough into a thin layer, cut it into circles and place the rounds on a buttered baking pan. Bake the cakes for about eight minutes or until they are yellow in color. This recipe makes about 24 tea cakes. It takes 30 minutes of prep time and 10 minutes of bake time.
To make Paula Deen's Southern tea cake recipe, sift 4 cups of flour, 1 teaspoon of baking soda and 2 teaspoons of baking powder. Add 2 cups of sugar, 2 eggs, 1/2 cup of buttermilk, 2 sticks of butter and 1 teaspoon of vanilla. Blend until the dough is soft. Roll the dough on a floured surface to 1/4-inch thick and cut into desired shapes. Place them on a greased baking sheet and bake for 10 to 12 minutes.
