A good seafood paella recipe can be made by cooking fresh crab, clams, mussels and shrimp with chicken, sausage, onions and garlic. Saffron adds a distinctive flavor to this rich dish.
To make seafood paella, heat 4 tablespoons of olive oil in a large pan. Add 1/2 pound of boneless, skinless chicken breast and sauté until it is golden brown. Add 1/4 cup of diced onions, 2 tablespoons of chopped garlic, 1/4 cup of diced red and green peppers and 1/4 cup of diced celery. Sauté for two minutes and then add 1 cup of parboiled rice, 2 cups of chicken stock and 1/2 tablespoon of saffron. Bring the mixture to a boil.
To the boiling ingredients, add 6 halved and cleaned blue crabs, 1 pound of peeled and de-veined shrimp, 12 clams, 12 mussels and 1/2 pound of sliced smoked sausage. Season with salt and pepper, then cover the pan and lower the heat. Let the paella simmer for 20 to 25 minutes before serving it. Other types of seafood such as lobster and calamari can be added or substituted for other ingredients in this dish. This paella can be served atop a bed of pasta or by itself.
