- 4 5-ounce salmon fillets
- 2 teaspoons plus 2 tablespoons olive oil
- Freshly ground black pepper
- 3 tomatoes, chopped

- 1 teaspoon dried thyme
- Heat oven and prepare salmon
- Prepare tomato mixture
- Wrap in foil
Heat the oven to 400 F. Drizzle the 2 teaspoons of olive oil over the salmon fillets and sprinkle each with salt and pepper. Set aside.
Combine the tomatoes, shallots, lemon juice, oregano and thyme with the remaining 2 tablespoons of olive oil and more salt and pepper.
Place each salmon fillet on a sheet of foil, with the oiled side facing down. Twist the ends of the foil together to form sides. Divide the tomato mixture between each of the salmon fillets, ensuring they are covered. Bring the sides of the foil packets over the salmon and seal closed.
