A good recipe for Roquefort dressing is the Ritz-Carlton version. For a simple salad with Roquefort, use a food processor with a steel blade to mix 4 ounces of good, chopped Roquefort cheese, 1 cup of mayonnaise, 1 cup of heavy cream, 2 tablespoons of tarragon vinegar, 1 teaspoon of kosher salt and 1/2 teaspoon of freshly ground black pepper until smooth. Cut a wedge of 1 head of iceberg lettuce and two slices of heirloom tomatoes for each plate, and drizzle enough dressing over the lettuce to moisten it. Serve immediately,
