To make a simple roasted asparagus and garlic dish, wash 1 pound of fresh asparagus, and cut off the tough end of each stalk. Arrange the stalks on a baking tray. Mince four cloves of garlic, and sprinkle the garlic over the asparagus. Drizzle olive oil over the asparagus, and roast the dish for about 10 minutes at 450 F, or until the vegetables are tender but still green.
Minced garlic burns easily. To make asparagus that is soft and charred, use sliced garlic instead, and let the dish roast for 15 to 18 minutes.
Alternatively, make asparagus that is infused with garlic flavor but has no garlic pieces. Brush asparagus with a small amount of olive oil, and roast it until tender. Meanwhile, combine five or six peeled garlic cloves with 1/2 cup of olive oil in a small saucepan. Heat the pan over medium heat for 10 minutes, until the oil is fragrant but the garlic is not yet brown. Discard the garlic cloves, and drizzle the oil over the roasted garlic.
Finish garlic asparagus with sea salt and pepper as well as a sprinkle of Parmesan cheese, the juice of half a lemon or a handful of toasted pine nuts.
