A good recipe for pound cake calls for beating an 18-ounce package cake mix, 1 package instant pudding mix, 4 eggs, 1 cup water and 1/3 cup vegetable oil on medium for two minutes. Pour batter into a greased pan, and bake for 35 to 40 minutes at 350 F.
Another highly-rated pound cake recipe using cake mix omits the pudding mix for a variety of other ingredients. Cream together 1/2 cup butter and 1 cup sugar, beat in 3 eggs, and then mix in 1 teaspoon each vanilla and lemon extract. Beat in 2/3 cup water and 1 8-ounce package sour cream, and then add 1 box yellow cake mix and 1 cup flour. Pour batter into a greased and floured 10-inch Bundt pan, and bake at 350 degrees Fahrenheit for 60 to 80 minutes. Cool the pan for 10 minutes, and place it on a wire rack to cool completely.
For a richer pound cake, beat 8 tablespoons butter and 1/2 cup vegetable oil, add 1 cup sugar, and beat until smooth. Add 5 eggs, one at a time, and mix in 1 box of yellow cake mix, 1 cup flour, 1 8-ounce package of sour cream, 1 cup evaporated milk and 1 tablespoon vanilla. Pour the batter into a greased and floured 10-inch tube pan, and bake for 60 to 65 minutes at 350 degrees Fahrenheit.
