For the Ore-Ida casserole recipe, start by preheating the oven to 350 degrees. Spray a 9-by-13-inch baking dish with nonstick cooking spray. Whisk together one 10.5-ounce can condensed cream of chicken soup, 2 cups sour cream, 1 teaspoon salt and 1/4 teaspoon ground black pepper in a large bowl. Mix in 2 cups shredded cheddar cheese, 1/3 cup sliced green onions and one 30-ounce package shredded hash brown potatoes. Spoon mixture evenly into the baking dish. Mix together 2 cups crushed corn flake cereal and 1/4 cup melted butter; sprinkle evenly over potato mixture. Bake uncovered for 45 to 50 minutes or until bubbly and hot.
Paula Deen also offers good potato casserole recipe. Preheat the oven to 350 degrees. Spread 2 cups mashed potatoes evenly on the bottom of a casserole dish. Spread 1/2 cup sour cream evenly on top. Mix together a house seasoning of 1 cup salt, 1/4 cup black pepper and 1/4 cup garlic powder. Sprinkle seasoning mixture over casserole to taste. Sauté 1 thinly sliced onion and 1 thinly sliced small bell pepper in 8 tablespoons butter. Layer vegetables evenly on top of the sour cream. Slice 4 cooked medium potatoes and layer over the vegetables. Add the butter. Sprinkle with additional seasoning mixture to taste. Top with 1 1/2 cups grated cheddar cheese. Bake for 25 to 30 minutes. Remove from the oven and crumble 6 crisply cooked slices of bacon on top.Learn more about Cooking
