Portuguese "Punched" Potatoes is a good recipe that calls for red potatoes, garlic, olive oil, salt and pepper. Another good recipe uses paprika, red wine vinegar, parsley and smoked sausage to flavor the potatoes.
Make Portuguese potatoes by first soaking 1 sliced garlic clove in 3 to 4 tablespoons of extra-virgin olive oil for 40 minutes. Meanwhile, place 8 small scrubbed red potatoes in a baking dish. Pound them with a meat mallet until they split open to reveal the lighter inner flesh, and roast them at 400 degrees Fahrenheit for 40 minutes. Drizzle the garlic-infused olive oil over the potatoes, and season them with salt and pepper.
Another version of the recipe calls for scrubbing and cutting 6 large baking potatoes into 2-inch chunks. Set the potatoes aside, and combine 3 cups of water and 3 tablespoons of red wine vinegar into a roasting pan. Whisk in 4 tablespoons of paprika, 1 1/2 teaspoons of sugar, 1 1/2 tablespoons of black pepper, 1 1/2 teaspoons of salt and 4 tablespoons of chopped fresh parsley. Toss 1 1/2 chopped sweet white onions, 1 1/2 chopped and seeded large tomatoes, the cut potatoes and 1 1/2 pounds of thinly sliced smoked sausage in the liquid. Bake the potatoes for 90 minutes to two hours at 375 degrees Fahrenheit.
