Taste of Home offers two good pineapple fluff recipes, including a recipe for pineapple pretzel fluff and a recipe for pineapple fluff pie. Both recipes are easy to make and call for minimal prep time.
To make pineapple pretzel fluff, combine 1 cup of coarsely crushed pretzels, 1/2 cup of melted butter and 1/2 cup of sugar in a small bowl. Combine well, and then press the mixture into the bottom of a 13-by-9 baking pan. Bake it for seven minutes at 400 degrees Fahrenheit. Allow it to cool.
While it cools, mix 1 8-ounce package of softened cream cheese with 1/2 cup of sugar until creamy. Add 1 20-ounce can of drained crushed pineapple and 1 12-ounce bowl of thawed frozen whipped topping in a large bowl. Chill the mixture until ready to serve. Then break the pretzel mixture into small pieces, and stir them into the whipped topping mixture.
To make pineapple fluff pie, combine 1 20-ounce can of crushed and drained unsweetened pineapple with 1 3.4-ounce package of instant lemon pudding mix and 1 8-ounce bowl of thawed frozen whipped topping. Spoon the mixture into 1 9-inch ready-made graham cracker crust. Refrigerate the pie until ready to serve. This recipe yields eight servings.
