Beat the eggs with a fork to prevent air bubbles from forming. Heat an empty 10-inch nonstick saute pan over medium to high heat, add unsalted butter, and spread it around the pan when it melts. Add the eggs, and stir vigorously with a silicone spatula for about five seconds.
When curds begin to form, tilt the pan to pour excess oil from the curds to the pan. Use the spatula to shape the edges and to ensure that the omelet does not stick to the pan. After allowing the omelet to cook for 10 seconds, snap the far edge of the omelet back to you, and use the spatula to fold the remaining part.
