A good recipe for peanut butter power balls is the Food Network's Power Balls that contain peanut butter, honey, rolled oats, chocolate chips and flax seed. Another one is Peanut Butter Oatmeal Energy Bites that contain chia seeds and shredded coconut in addition to peanut butter and oats.
To make Power Balls, combine 2 cups of old-fashioned rolled oats, 1 cup of extra-crunchy peanut butter, 1/2 cup of raw honey, 1/2 cup of mini chocolate chips and 1/2 cup of dried cranberries, and add 1/2 cup of sunflower seeds and 2 tablespoons of flax seed. Blend all the ingredients in a food processor, and chill the mixture for 30 minutes for the mixture to harden. Roll the batter into balls, place them on wax paper, and chill them for another 30 minutes.
Make Peanut Butter Oatmeal Energy Bites by mixing together 1 cup of oats, 2/3 cup of toasted shredded coconut, 1/2 cup of peanut butter, 1/2 cup of mini chocolate chips and 1/3 cup of honey. Add in 1 tablespoon of chia seeds and 1 teaspoon of vanilla extract to the mixture, and form it into 1-inch balls. Place the bites on a parchment paper-covered tray before allowing them to chill in the refrigerator.
