A good peanut butter recipe includes roasted peanuts, kosher salt, honey and peanut oil. This is an easy recipe that takes about five minutes to prepare once the peanuts are roasted. To roast the peanuts, all one needs are in-shell raw peanuts, peanut oil and kosher salt.
For peanut roasting, rinse 2 pounds of in-shell raw peanuts in cold water, dry them and place them in a large bowl. The peanuts are then tossed with 2 tablespoons of peanut oil and 2 tablespoons salt until well-coated. It is important to remember to use Spanish peanuts for peanut butter, because they have a higher oil content. Then, evenly distribute the peanuts on two baking sheets and roast in the oven at 350 degrees Fahrenheit for 30 to 35 minutes. Rotate the pans once during roasting to promote even cooking. When the peanuts are done cooling, remove the shells and the skins.
After the peanuts are roasted, place the peanuts, 1 teaspoon kosher salt and 1 1/2 teaspoons honey into a food processor and blend for one minute. After this, scrape down the side of the processor and continue to process while slowly pouring in 1 1/2 tablespoons peanut oil. This takes about two minutes. Now the peanut butter is ready and can be stored in an air-tight container in the refrigerator for up to two months.
