Emeril Lagasse’s recipe, called EJ's simple oven-BBQ ribs, is a good recipe for oven baked ribs. Begin by preheating the oven to 300 F. Line a large baking sheet with enough aluminum foil to cover the pan twice.
Place 2 racks of baby back ribs in one layer on the baking sheet. To make Emeril’s Rustic Rub seasoning mixture, combine 8 tablespoons paprika, 3 tablespoons cayenne, 5 tablespoons freshly ground black pepper, 6 tablespoons garlic powder, 3 tablespoons onion powder, 6 tablespoons salt, 2 ½ tablespoons dried oregano and 2 ½ tablespoons dried thyme in a small bowl. Remove all but 6 tablespoons of mixture and set aside. Store the excess mixture in an airtight container.
Mix into the 6 remaining tablespoons 1 ½ teaspoons salt, 1 teaspoon freshly ground black pepper and 1 teaspoon celery salt. Coat both rib slabs evenly with seasoning mixture. Fold the foil over the ribs and seal tightly on each side. Bake the ribs for 2 ½ to 3 hours or until the ribs are very tender. Take the ribs out of the oven, and peel back the foil to expose the ribs.
Lightly spread Emeril’s Bam B Q Sweet Original Barbecue Sauce on the meaty sides of the racks with a pastry brush or the back of a spoon. Return the ribs to the oven, and bake until the sauce is lightly browned and thickened.
