Todd Wilbur of Top Secret Recipes offers a recipe that is a facsimile of Olive Garden's Alfredo pasta entree. The recipe calls for ingredients such as butter, garlic, heavy cream and spices for the sauce. Fettuccine is the ideal pasta to emulate Olive Garden's dish.
Start the Alfredo sauce by melting 1 stick, or 1/2 cup, of butter in a medium saucepan over low to medium heat. Next, add 2 cloves of minced garlic, 2 cups of heavy cream, 1/8 teaspoon of pepper and a pinch of salt to the pan. Bring mixture to a simmer over low heat. Do not allow the mixture to boil. Add 1/2 cup grated Parmesan cheese to the pan, and continue to simmer for eight minutes or until it is thick.
In a pot, bring 4 to 6 quarts of water to a rapid boil. Add one 12-ounce box of fettuccine pasta, and cook for 12 minutes or until done according to the box's directions. Drain the pasta, and plate the food. Pour sauce over each plate of pasta.
This recipe makes two to three large servings. The total cook time for this recipe is about 25 minutes. Each serving measures in at 767 calories.
