Chocolate Chip Oatmeal Cookie

- 2 cups quick cooking or rolled oats
- 1 1/2 cups all-purpose or unbleached flour
- 1 teaspoon baking soda
- 1 1/2 cups packed brown sugar
- 1/4 teaspoon salt
- 1 egg
- 1 cup softened butter or margarine
- 1 cup semi-sweet chocolate chips
- 1 cup chopped nuts, optional
- Make the batter
- Arrange the batter on the baking sheet
Preheat the oven to 350 degrees Fahrenheit. Mix the brown sugar and butter in a large bowl until both have blended well. Add the vanilla and egg while stirring into the butter mixture until fluffy. Stir in the flour, baking soda, oats and salt. Add the chocolate chips, nuts or raisins while continuing to stir.
Grease a cookie sheet and then scoop the batter in rounded tablespoonfuls on the sheet. Allow a distance of 2 inches between the batter.
Place the cookies into the oven and bake until golden brown or between 10 to 12 minutes. Allow to cool slightly and then set the cookies on a wire rack.
