The Food & Wine molten chocolate volcano cake recipe requires one stick of unsalted butter, six ounces of bittersweet chocolate (preferably Valrhona), two eggs, two egg yolks, 1/4 cup of sugar, a pinch of salt, and two tablespoons of all-purpose flour. While the oven is preheating to 450 degrees, the baker should lightly coat four ramekins with butter and flour. Then, the butter and chocolate needs to be melted over simmering water in a double boiler. The eggs, egg yolks, sugar and salt need to be mixed separately until paste-like.
The butter and chocolate need to be folded into the egg mixture until smooth. The batter should then be spooned into the ramekins and baked for approximately 12 minutes, or until the outside of the cakes are firm. The molten chocolate cake can be accented with raspberries, strawberries, powdered sugar or mint leaves as desired. Other five-star recipes may recommend using light brown sugar instead of regular sugar, and many recommend adding vanilla extract. These suggestions are optional to the baker.
