To make a good recipe for moist oatmeal cookies, combine 1 cup of brown sugar with 2 eggs, 1 teaspoon of vanilla, 2 cups of flour, 1 teaspoon of baking soda and 1 teaspoon of salt with 1 1/2 teaspoons of ground cinnamon and 3 cups of quick-cooking oats, and bake cookies using the dough for eight to 10 minutes at 375 F. Cool the cookies completely on a wire rack.
Alternatively, make moist oatmeal cookies by incorporating bananas, old fashioned oats and cinnamon. Mix 3/4 cup of softened, salted butter with 1 cup of packed brown sugar, 1/2 cup of white sugar, 1 egg, 1 teaspoon of vanilla extract and 1 cup of mashed bananas until well combined. Beat in 1 1/2 cups of flour, 1 1/2 teaspoon of cinnamon, 1 teaspoon of baking soda, 1/4 teaspoon of ground cloves and 2 teaspoons of cornstarch. Stir in 3 cups of old fashioned oats.
Spoon tablespoonfuls of the dough onto a parchment-paper-lined cookie sheet. Flatten the cookies to make thick disks, and bake them for 10 to 12 minutes at 350 F. Cool the cookies on the cookie sheet for three to four minutes, and transfer them to a wire rack to cool completely.
