To make the Chewy Gluten Free, sift together 2 cups of brown rice flour, 1/4 cup of cornstarch, 2 tablespoons of tapioca flour, and 1 teaspoon each xanthan gum, salt and baking soda. Cream together 8 ounces of melted butter, 1/4 cup of sugar and 1 1/4 cups of brown sugar, and then beat in 1 egg, 1 egg yolk, 2 tablespoons of milk and 1 1/2 teaspoons of vanilla. Gradually mix in the flour mixture, and fold in 12 ounces of chocolate chips. Roll the cookies into balls, and bake them at 375 degrees Fahrenheit for 14 minutes.
To make Chewy Chocolate Chip Cookies, make the gluten-free flour blend by whisking together 2 cups of rice flour, 2/3 cup of potato starch, 1/3 cup of tapioca flour and 1 teaspoon of xanthan gum. Add 2 1/4 cups of the mixture to a bowl with 1/4 teaspoon of xanthan gum, 1 teaspoon of baking soda, 1 teaspoon of baking powder and 1/2 teaspoon of salt. Add a mixture of 3/4 cup of butter, 3/4 cup of brown sugar, 1/2 cup of sugar, 2 eggs and 2 teaspoons of vanilla. Fold in 2 cups of chocolate chips, roll the dough into balls, and bake the cookies at 375 degrees Fahrenheit for nine minutes.
