One good recipe using kielbasa is collard-kielbasa soup. This recipe serves 24 people and takes approximately one hour and 20 minutes to prepare and cook on the stovetop.
To make this recipe, pour 1 quart of water into a soup pot over high heat. Slice two 16-ounce packages of kielbasa sausage into 1/2-inch pieces, and add them to the water. Cover the pot, and bring the water to a boil. Reduce the heat to a simmer, and continue to cook the kielbasa for 30 minutes.
Peel and dice 4 medium potatoes, and add them to the pot. Continue to cook the kielbasa and potatoes for an additional 15 to 20 minutes. Thaw and stir in 2 pounds of chopped frozen collard greens and three 14.5-ounce cans of great northern beans. Continue to cook everything at a simmer for another 20 minutes.
While the soup simmers, cook 1/4 cup of diced bacon in a pan over medium heat. Add 1 minced clove of garlic, 1 diced small onion and 1 diced green bell pepper. Cook the ingredients until the bacon is almost crispy, and then drain away any excess grease. Add these ingredients to the soup pot, and simmer all of the combined ingredients for 15 to 20 minutes more. Taste the soup, and season it with salt and pepper before serving.
