A good recipe for homemade yeast rolls includes milk, sugar, flour, eggs and yeast as well as butter, salt and water. This recipe requires two hours and 20 minutes' preparation time and 20 minutes' baking time.
In a small saucepan, scald 1/2 cup milk, and remove from heat. Add 1/2 cup sugar, 1 1/2 teaspoons salt and 1/4 cup melted butter. In a large bowl, pour 1/2 cup water that is between 105 and 115 degrees Fahrenheit. Add two envelopes active dry yeast, stirring until dissolved. Add warm milk mixture, two beaten eggs and 2 1/4 cups of flour. Stir until combined. Add approximately 2 1/4 cups of flour, 1/4 to 1/2 cup at a time, mixing thoroughly after each addition. Use slightly more or less flour to achieve a smooth, elastic consistency in the dough.
Transfer the dough ball to a floured surface, and knead it for eight to 10 minutes. Place the dough ball in a large, greased bowl, turning the ball to coat it. Cover the bowl with a clean towel, and place it in a warm oven to rise to double its size, approximately an hour. Punch down the dough. Pinch or twist to remove 2 to 3 tablespoons of dough at a time, and form it into a ball. Place the balls into a greased baking pan spaced slightly apart. Cover the pan with a clean towel, and allow the dough to rise for another hour. Preheat the oven to 375 degrees Fahrenheit, and bake the rolls for 20 to 25 minutes. Brush butter on the tops of the rolls, and allow them to rest for 10 to 15 minutes before serving.
