Make homemade chai tea by combining seasonings and water in a saucepan and boiling for a few minutes. Combine this with the tea, bring it to a boil, and simmer it for another few minutes. Some seasonings for chai tea are 6 green cardamom pods, 12 whole cloves, 1 tablespoon fennel seed, 1 cinnamon stick, 6 black peppercorns and 1 piece of ginger root. This is enough for 8 1-cup servings.
Add the ginger root, peppercorns, cardamom, fennel seed, cinnamon and cloves to a medium pot with 7 cups of water, boiling for 5 minutes. Remove the entire pot from the heat, and let it steep for an additional 10 minutes. Add 2 tablespoons of darjeeling tea to the water, and bring it back to a boil. Once boiling, reduce the heat again, and simmer for another 5 minutes.
Strain the chai tea mixture, and then pull out any big pieces of spices left in the container. Pour the chai tea back into the saucepan. Mix in 1 cup of milk and 4 tablespoons of brown sugar. Stir the mixture, and serve the chai tea right away. From beginning to end, chai tea takes about 25 minutes to make, including prep and cook time.
