To make Food Network's recipe, preheat the oven to 300 degrees F. Combine 2 cups granulated sugar, 1 1/2 cups vegetable oil and 4 whole eggs. In a separate bowl, mix 2 cups pastry flour, 2 teaspoons baking soda, 1 teaspoon salt and 2 teaspoons ground cinnamon. Mix the dry ingredients into the wet ingredients, and add 3 cups raw finely ground carrots and 4 ounces finely chopped walnuts. Divide the batter between three 9-inch greased cake layer pans. Bake each layer for 50 to 60 minutes, and let cool for one hour. Store for one day.
In a mixer, combine 1 1/2 pounds powdered sugar, 12 ounces room-temperature cream cheese, 1 tablespoon vanilla extract and 2 ounces room-temperature margarine until well-blended. Refrigerate. Remove the cake layers from the pans, and place the first layer on a cake stand bottom-side down. Spread 3 1/2 ounces of icing on the layer, and top with another cake layer top-side down.
