This recipe yields around 12 cabbage rolls.

Ingredients:

  • 2 tsp. butter
  • 1 cup chopped yellow onions
  • 1 tsp. minced garlic
  • 28 oz. chopped tomatoes with juices
  • 1 cup cream
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. sugar
  • 1 head cabbage, cored and softened in hot water
  • 2 tsp. unsalted butter
  • 1 cup chopped yellow onions
  • 2 tsp. chopped garlic
  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1 cup cooked long-grain white rice
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 egg
  • 2 1/2 tsp. paprika
  • 2 tbsp. salt
  • 2 tbsp. garlic powder
  • 1 tbsp. black pepper
  • 1 tbsp. onion powder
  • 1 tbsp. cayenne pepper
  • 1 tbsp. dried leaf oregano
  • 1 tbsp. dried thyme
  1. Make the Creole seasoning
  2. Combine the paprika, garlic powder, onion powder, cayenne pepper, dried oregano and thyme with the 2 tablespoons of salt and 1 tablespoon of black pepper. Set aside.

  3. Make the sauce
  4. Melt the butter in a saucepan and add 1 cup of yellow onions to cook for 3 minutes. Add the minced garlic and cook for a further minute, stirring occasionally, then add the tomatoes and cream to cook for another 5 minutes. Add the vinegar and sugar and allow to simmer until the sauce thickens.

  5. Prepare the cabbage leaves
  6. Remove the spine from each cabbage leaf, pat them dry and lay on paper towels.

  7. Make the stuffing
  8. Melt 2 teaspoons of butter and cook another cup of chopped onions, stirring until they begin to caramelize. Add the chopped garlic and cook for another minute then remove from the heat. Combine the pork, beef, rice and Creole seasoning with salt, pepper, egg and the cooked onions.

  9. Fill and bake the cabbage rolls
  10. Spoon the filling into the center of each cabbage leaf and roll. Layer the rolls with the sauce in a baking dish and cover with foil. Bake at 350 F for up to 2 hours, or until the meat is cooked through. Serve with the sauce.
