Make homemade barbecue sauce by sautéing 1/2 diced onion and 2 minced garlic cloves in oil for five minutes. Add 1 cup ketchup, 1/3 cup molasses, 1/3 cup brown sugar, 4 tablespoons minced chipotle peppers and 4 tablespoons vinegar, plus 1 tablespoon Worcestershire sauce. Simmer for 20 minutes.
Barbecue sauce can be seasoned by adding vinegar, fruit, cola or coffee. Create an Asian-inspired barbecue sauce by sautéing 2 chopped garlic cloves and 2 tablespoons grated ginger in 2 tablespoons of peanut oil until fragrant. Stir in 1/2 cup dry sherry, 1/2 cup hoisin sauce and 1/2 cup ketchup followed by 1 1/2 teaspoons chili-garlic sauce, 2 teaspoons soy sauce and 2 teaspoons dark sesame oil. Stir well and bring to a boil. Remove from heat, and let cool before using on any protein. This barbecue sauce is perfect on ribs, chicken or pork chops.
To make, a North Carolina barbecue sauce combine 4 ounces chopped bacon, 3/4 cup broth, 1 1/2 cups cider vinegar, 1/2 cup white vinegar and 1/4 cup brown sugar in a saucepan over high heat. Add 1/4 cup ketchup, 2 teaspoons red chili flakes, 1 teaspoon salt and 1 teaspoon chipotle chili powder to the pan. Bring to a boil before reducing the heat and simmering for 15 minutes. Remove from heat, and let cool for 20 minutes. Remove the bacon.
