A recipe for Hawaiian beef sliders from Healthy Cooking magazine is a good recipe, and it makes sweet and savory sliders with pineapples and bacon. The recipe takes 40 minutes to make and yields 6 servings.
Drain 1 can of unsweetened crushed pineapple, and reserve the juice and 1 1/2 cups of pineapple. In a large bowl, combine 3/4 cup of the reserved pineapple with 1 teaspoon of pepper and 1/4 teaspoon of salt. Crumble 1 1/2 pounds of lean ground beef over the mixture, and mix well. Mold the mixture into 18 patties, and place them in two 11- by 7-inch dishes.
In a small bowl, combine 1/4 cup of soy sauce, 2 tablespoons of ketchup, 1 tablespoon of white vinegar, 2 minced garlic cloves and 1/4 teaspoon of crushed red pepper flakes, as well as the reserved pineapple juice. Pour half of the marinade into each dish, cover them, and refrigerate them for 1 hour, turning once. Drain and discard the marinade. With tongs, hold a paper towel moistened with cooking oil, and lightly coat a grill rack.
Grill the patties covered over medium heat for 4 to 5 minutes on each side, or until a thermometer reads 160 degrees Fahrenheit. Grill 18 miniature whole wheat buns uncovered for 1 to 2 minutes. Serve the burgers on the buns with baby spinach leaves, cooked and crumbled bacon strips and sliced jalapeño peppers, as well as the remaining pineapple.
