To make grilled scallops, pat 20 to 25 large scallops dry and lay them on a tray. Grill the scallops on a preheated surface for approximately two to three minutes on each side and serve them immediately. To make grilled scallops with coriander butter sauce, simmer 2 tablespoons of minced onion, 1 tablespoon of white vinegar, 1/4 cup of water and 1 teaspoon of ground coriander in a heavy saucepan until the liquid is reduced to about 1 tablespoon. Cut 1/2 stick of cold unsalted butter into four pieces. Whisk the pieces into the saucepan one at a time. Take care not to let the sauce get too hot and liquefy. Season the sauce with salt and pepper to taste, then set it aside in a bowl.
