Preheat a grill or a grill pan to medium-high heat. This reduces any potential mess without any loss of grill marks. Season four grouper fillets that each are 4 to 6 ounces with salt and pepper, and drizzle with 1 tablespoon of olive oil on both sides.
Add the grouper fillets to the preheated grill, and cook them for three to four minutes per side. Place a piece of foil on the grill, and cook the fish on the foil. Remove the grouper fillets from the grill, and serve them promptly with the key lime mango salsa.
To make the key lime mango salsa, add to a medium-size bowl 2 cups of peeled and diced mango, 1 cup of peeled and diced jicama, 1 seeded and chopped fresno chili, and 1 peeled red Bermuda onion, diced small. Add in 1/2 bunch of chopped leaves and stems of cilantro, the juice of 6 limes and salt and pepper to taste. Use apple, cucumber or pineapple instead of jicama, if you prefer.
Toss the salsa ingredients to combine, and serve the salsa on the side with the grouper or loosely piled atop the fillets.
