To make these ginger cooking, pre-heat the oven to 350 degrees Fahrenheit, and line cookie sheets with non-stick baking mats or parchment paper. In a bowl, use a low-speed electric mixer to cream together 3/4 cup of vegetable shortening and 1 cup of sugar. Add an egg and 1/4 cup of molasses, and beat these together with the shortening and sugar.
In another bowl, sift together 2 cups of sifted all-purpose flour, 2 teaspoons of baking soda, 1 teaspoon each of ground cinnamon and ginger, 1/2 teaspoon of ground cloves and 1/2 teaspoon of salt. Add this to the liquid mixture, and stir it together to form a dough.
Roll out the dough into a ball shape that is about an inch in diameter, and then roll the balls in sugar. Place them approximately 1/2 inch apart on the cookie sheets. Gently flatten the top of each ball with the fingertips, and then bake the cookies for about 12 minutes. When the cookies come out of the oven, place them on a wire rack to cool before eating.
