A good recipe for fresh salmon patties calls for ingredients such as white breadcrumbs, eggs and lemon juice. It takes about 30 minutes total; start by removing skin and pin bones from the salmon.
Dice the salmon into quarter-inch pieces and combine the salmon with 1/4 cup of breadcrumbs, 1/4 cup grated onion, 2 tablespoons of fresh chopped parsley and 3/4 tablespoon salt. Pick either 2 tablespoons of mayonnaise or 2 tablespoons of creamy garlic dressing to add to the mixture. Use a 1/4-cup measuring bowl to lay down patties about 3/4-inch thick. Put the patties on a pan lined with parchment. Freeze the patties for 15 minutes so they are easier to work with.
Sift the patties in flour, and dip them into the yolk from two large eggs as well as panko crumbs or dry white breadcrumbs. Allow the mixture 10 minutes to dry. Begin frying by putting oil in a skillet and heating it for about three minutes on medium-high heat. Put the patties dry side down in the skillet, and cook for two minutes until the patties are somewhat golden brown. Flip sides and cook for about two more minutes. Optionally, sauté the patties in oil and put them in an oven at 350 degrees for 10 minutes.
