To make lumpia, prepare 1/2 pound of ground pork and shrimp, 2 garlic cloves, 2 cups of celery, 2 cups of carrots, 1 cup of water chestnuts, 1 cup of scallions, 3 teaspoons soy sauce, lumpia wrappers, beaten eggs and vegetable oil for frying. To make garlic sauce, prepare 3 fresh garlic cloves, 1/4 cup of red wine vinegar, and soy sauce and black pepper to taste.
Prepare the garlic dipping sauce by mixing the ingredients together well, and set it aside for later. In a large skillet, brown the pork with the garlic and onions and cook until the mixture is well done and fragrant. Add the shrimp to the mixture and cook until it is opaque, and then add the vegetables to saute until they are tender. Once done, season the skillet with black pepper and soy sauce.
After seasoning, remove the mixture from the heat and allow to cool. Once it is cool, place 3 teaspoons of the mixture into a lumpia wrapper. Brush the edges of the wrapper with beaten egg and fold in the formation of a lumpia. After making all the rolls, heat the oil to 375 degrees and fry the lumpias until they are crispy and golden brown.
