Some recipes for fig bread include fig bread with pecan and spices and fig and date bread. To make the first recipe, beat together 3 eggs and 2 1/2 cups of sugar. Mash 2 cups of ripe figs, and add them to the sugar and eggs with 3/4 cup of vegetable oil.
In a separate bowl, sift together 3 cups of flour, 2 teaspoons of baking soda, 1 teaspoon of salt and 1/2 teaspoon of cinnamon. Alternate between adding 1/2 cup of buttermilk and the fig mixture to the dry ingredients, and beat them together to combine. Fold in 1 cup of chopped pecans, and bake the batter in a greased and floured loaf pan at 350 degrees Fahrenheit for approximately one hour.
To make fig and date bread, preheat the oven to 350 degrees Fahrenheit. Mix together 1 cup of chopped pitted dates, 1 cup of chopped dried figs, 1/4 cup of softened unsalted butter and 1 1/2 teaspoons of baking soda. Pour 1 cup of boiling water over the ingredients, and allow them to soak for 15 minutes.
Beat in 1/2 cup of white sugar, 1/2 cup of chopped walnuts and 2 eggs. In a separate bowl, sift together 3/4 cup of all-purpose flour, 3/4 cup of whole-wheat four, 1/2 teaspoon of baking powder and 1/2 teaspoon of salt. Stir the dry ingredients into the wet ingredients, and then transfer the batter to a greased 8-by-4-inch baking pan.
Bake the batter for 55 to 65 minutes, and then allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
