To make a fresh beet salad, you need 1 pound of fresh beets, 1 large shallot, 2 teaspoons of Dijon mustard, 1 tablespoon of extra virgin olive oil and 2 tablespoons of strong vinegar, such as sherry vinegar. You also need 1 tablespoon of minced parsley, dill or chervil. Alternatively, you can also use 1 teaspoon of minced rosemary or tarragon instead.
First, peel both the beets and the shallot. Next, combine these ingredients in a food processor fitted with a metal blade. Pulse the beets and shallot in the food processor until shredded but not pureed. If you do not have a food processor, grate the beets by hand and mince the shallots. After this, scrape the ingredients into a large bowl, and toss the salad together with the mustard, olive oil and vinegar. Finally, add salt, pepper and extra herbs as desired.
